My Usual Breakfast!

I love a good breakfast! I tend to go for a sweeter breaky rather than savoury, and I’m all about porridge and vegan yogurt at the mo!

I love Alpros new unsweetened soygurt. Super tasty! Chuck in some berries, banana, bran flakes or dried berries. What ever you fancy! Yum!

Oats is a classic! So cheap and versatile! When it’s cold I love having porridge, I usually put in 2 ton of cinnamon Haha and when I want to treat myself I go heavy on the golden syrup!😉 Overnight oats are a current fave! Check out my overnight oats recipe here. Semolina porridge is another huge favourite, so easy to make and I actually prefer to keep it very simple, it doesn’t need a lot of toppings or added flavours. I could eat semolina porridge on it’s own without anything! Click here for my semolina recipe!

And when all else fail a bowl of cereal with almond milk will do! 😍


Lentils and Carrots with Coconut Milk

Happy Wednesday!! This dish is so nice. Creamy coconutty lentils! So easy to make! And budget friendly😄

Recipe 3 or 4 portions

  • 2 large grated carrots
  • 1 chopped onion
  • Oil
  • Sambal oelek (to taste)
  • 2 tbsp tomato puree
  • 2 or 3 garlic cloves
  • 1 veggie stock cube
  • 1 tin coconut milk
  • 300ml water
  • Bunch coriander
  • Juice of 1 lime
  • Salt and peppar to taste
  • 225 grams lentils

Fry onions in oil for a few minutes then add chopped garlic and the grated carrots, fry a few more minutes. Add everything else and simmer until lentils are cooked. Super simple and so yummy! Love this dish. Can be eaten with rice, pasta or on it’s own!

Why not double the recipe and put some in the freezer!


Ginger, Cinnamon, Lemon and Mint Tea!

Rainy and grey Tuesday! Please come back sun! Been so lovely the last few days… Maybe it’s a blessing in disguise, it’ll will keep me indoors which means I can try and get some packing done!!😜

I only tried this a couple weeks ago for the first time and I wish I’d tried it sooner!! So tasty and healthy! I tried it in a cafe the first time but buying the bits to make it at home is so much cheaper! And it’s a lovely morning drink 😇

I don’t have an exact recipe for this as I just chucked in a bit of every thing. I used about an inch of ginger, couple slices of lemon, 2 sticks cinnamon, few leaves of mint and as I love a bit of sweetness I added a tsp sugar. Add everything to boiling water! Feel free to add whatever sweetener you like or just leave it out.



Grain and Bean Salad with Guacamole!

Hope everyone is having a good Monday. 1st of April!!!! What happened to March! Time is going so fast it’s scary. Winter will be 12 weeks tomorrow!

Prepared 4 lunchboxes this morning. This took me less than 15 minutes to put together! Super healthy and yummy, got my protein, complex carbs and healthy fats!😍

How good does this look!?

Grain and bean salad

  • 1 microwave packet of mixed grains (I used Sainsburys own brand mixed wholegrain rice and freekeh) or cook grains from scratch if you got the time 😉
  • Tin of mixed beans
  • Small tin of sweet corn
  • 1 red pepper
  • Half a small cucumber
  • Bunch of coriander
  • Salt and pepper to taste

Microwave the rice. Chop cucumber and pepper in to small pieces. Chop the coriander then mix everything in a big bowl. Salt and pepper to taste.

Before the mixing!


  • 3 avocados
  • Half a red onion
  • Juice from half a lime
  • Chilli flakes
  • Bunch of Coriander
  • Salt and peppar to taste

Finely chop red onion and coriander then mix everything in a bowl. I kept my guac a bit chunky.

Divide everything in to 4 lunchboxes! Simple healthy and delicious😍

Now I’m set for 4 days! This is also super cheap. Most expensive part of the meal is the avos at £1.40 a piece. But the grains are 85p a pack and the beans are 55p! So all together it’s very budget friendly😊


Chocolate Oatmeal Cookies – 4 Ingredients!!

Happy Sunday! Hope you are all having a good day. My first mothers day😇

I saw a recipe for some oatmeal cookies on the blog budgetfriendlyvegan and wanted to give them a go! Change it a little bit as Jack doesn’t like raisins😜

Recipe 9 cookies

  • 135 gram oats (grind half in to oat flour in a food processor)
  • 2 mashed up bananas
  • 1 tbsp chia seeds
  • 2 tsp cocoa powder

Mix everything in a bowl. Roll in to 9 balls, put these on a baking tray and flatten. I made the about a centimeter thick. Bake at 180° for 20 minutes.

I would definitely make them again! Very squidgy and soft! Perfect as a healthy breakfast cookie to eat on the go!

Easy Vegan White Bean and Carrot Curry!

Happy Friday! Currently waiting for Jack who’s been down in Bournemouth all week! He should be home any minute now, yeey!

If you’re not sure what to have for dinner tonight then why not make this super easy bean curry, So yummy and dead easy to make!

Recipe 3 or 4 portions

  • 1/2 Onion, Chopped
  • 2 Carrots, Chopped in to small pieces
  • 2 tbsp oil
  • 1-2 tbsp Curry powder
  • 2 tbsp flour
  • 300ml water
  • 200ml coconut milk
  • 1 veggie stock cubes
  • 2 tins white beans
  • Salt and peppar to taste

Fry onion and carrots in the oil until the onions start to go clear. Add the curry powder and flour, stir it all in and cook for a few more minutes. Add the stock cube, water and coconut milk. Simmer until its thickened slightly then add the beans. Salt and peppar to your liking. This is a real favourite in my household!😍

Eat with rice or on it’s own!

I always double the recipe so that I can freeze some! Love a freezer friendly meal 😉

Chia Seed Pudding – Great Basic Recipe

I wanted to share this great chia seed pudding recipe. Love having chia seed pudding for breakfast or as a dessert! Used to make chocolate chia seed pudding all the time, Yum!

Cinnamon and vanilla pudding with berries!

Chia seeds are a great source of protein and omega 3 fatty acids which is great for vegans! But everyone can benefit from adding chia seeds to their diet😊

Recipe 1 portion

  • 3 tbsp chia seeds
  • 1 cup/240ml plant milk

This is the base and to this you can add what you want. E.g. To make a PB and choc pudding simply add a tbsp each of peanut butter and chocolate powder. I would recommend adding some type of sweetener as well. Some agave, date or golden syrup for example!

For this pudding I added

  • Half teaspoon cinnamon
  • 1 teaspoon golden syrup
  • A couple drops vanilla extract
  • Topped with frozen berries

Simply mix everything apart from the berries and leave in the fridge over night! Add the berries when your ready to eat your pudding😊
