Weeks are flying by!! Cant believe its June next week!
Anyway, I whipped up some fried rice the other day! Made 4 portions and froze 3 of them. Yes you CAN freeze stir fried rice😆
I’ve used microwave rice and also a bag och pre chopped stir fry veggies for this as it saves so much time! Plus the bag of veg was reduced 😉
2 bags microwave rice. I used uncle Ben’s 5 whole grains.
600g chopped veg. What ever you like or just buy pre chopped. I got a bag from sainsbury’s.
2 tbsp soy sauce
3 tbsp sweet chilli
2 garlic cloves
Salt and pepper to taste
Extra chili flakes if you want it extra hot
Simply fry the veg in oil until softened. Using a garlic crusher add the garlic and add soy sauce, sweet chilli, salt, pepper and some chili flakes. Fry a bit longer then add the rice (no need to microwave the rice as it will cook in the wok), fry for a few minutes. Done! Super easy and really yummy!
Can not believe that that on Sunday we’ll be locking up this place for the last time! Unless we decide to move back in a few years of course😉 I still feel like sh*t, definitely got the flu. Fever is finally gone but got a bad cough, aches and the energy level are nonexistent..
I am so excited to move to Bournemouth and be living by the sea side. I’m so happy that Winter will be growing up in a beautiful place with nature on the doorstep! I don’t mean to hate on London, we have had some great times here but it’s not the place I want to raise my child.
Anyhow, trying to use up the last bits in the freezer and had these 2 yummy meals this week. They’ve been sitting in the freezer for a while! Cant wait to be settled in to our new flat, do a massive food shop and start cooking again.

I have had a fever for 2 days now! So very frustrating especially as we got so much to do before the move!! I have managed to go through all my clothes already which is great. Ended up with 5 massive bags going to charity and Jack’s gonna start bringing stuff down to Bournemouth tomorrow! The new tenants are moving in on the 15th! Cant believe that we won’t be living here anymore by the end of next week! It’s been our home for 4 years. But who knows we might be back😆
Made this big bowl of porridge this morning. Been a while since I’ve had porridge, it’s been mostly semolina or overnight oats lately!
Its Friday!! Yeey. Jacks coming back home from Bournemouth today and the sun is shining. I have been sorting out my clothes this week and got 6 huge bin bags full of stuff that’s going to charity! Feels so good to have a clear out😊
As its Friday why not make this easy marble sponge cake! Or as we call it in Sweden Sockerkaka which directly translate to sugarcake!
Sorry about the awkward measurements but I have converted this from a swedish recipe!
1 cup + 1/4 cup flour
1/2 cup minus 1 tbsp almond flour
100g melted vegan butter
200ml plant milk
1 tbsp baking powder
1 cup + 1 tbsp sugar
1 tbsp vanilla extract
Half of a mashed banana
Pinch of salt
3 tbsp cocoa powder
Mix the dry ingredients in a bowl. However, do not mix in the cocoa powder. Mix the melted butter, plant milk and the mashed banana then add this to the dry ingredients. Pour half of the batter in to another bowl and add the cocoa powder to one of the bowls. Don’t over mix the batter, gently mixing with a spatula is enough. Grease and flour a baking tin, pour in the batter one bowl at a time then run a fork through it to get the marble effect. Bake at 175° for 35 – 45 minutes. The time depends on the ripeness and size of the banana. Check your cake for the first time with a knife at the 35 minute mark. It should come out clean.
I should have run the fork through it a few more time to get more of a marble effect!
