Simple Veggie Fried Rice!

Weeks are flying by!! Cant believe its June next week!

Anyway, I whipped up some fried rice the other day! Made 4 portions and froze 3 of them. Yes you CAN freeze stir fried rice๐Ÿ˜†

I’ve used microwave rice and also a bag och pre chopped stir fry veggies for this as it saves so much time! Plus the bag of veg was reduced ๐Ÿ˜‰

Recipe

  • 2 bags microwave rice. I used uncle Ben’s 5 whole grains.
  • 600g chopped veg. What ever you like or just buy pre chopped. I got a bag from sainsbury’s.
  • Oil
  • 2 tbsp soy sauce
  • 3 tbsp sweet chilli
  • 2 garlic cloves
  • Salt and pepper to taste
  • Extra chili flakes if you want it extra hot

Simply fry the veg in oil until softened. Using a garlic crusher add the garlic and add soy sauce, sweet chilli, salt, pepper and some chili flakes. Fry a bit longer then add the rice (no need to microwave the rice as it will cook in the wok), fry for a few minutes. Done! Super easy and really yummy!

Easy Spinach and Black Beans!

Happy Friday!

Made this super easy black bean and spinach thingy the other day! Falls somewhere between a soup and stew I guess Haha Super cheap, fast and delicious!

Recipe

  • 1 Tin black beans (use half the liquid as well)
  • 2 garlic cloves (very garlicky yuum)
  • 1 small tin sweetcorn
  • Half a pepper
  • Spices of your choice! I used salt, pepper, chilli flakes and some Nandos hot sauce๐Ÿ˜Š
  • About 150 gram spinach

Put everything apart from the spinach in a pot and simmer away for a while mash up some of the beans with a fork, this will make it thick and saucy. Add spinach and let it wilt. Done!

Very yummy and budget friendly!

Beans in Satay Sauce!

Finally have a kitchen again! So nice to be able to cook again!๐Ÿ™Œ

This is the easiest meal prep! Cheating with store bought satay sauce! Haha This took no more than 20 mins start to finish. Great when you have a needy baby!!๐Ÿ˜‰๐Ÿ˜‰

Recipe – 5 large portions

  • 2 sliced peppers
  • 175g baby corn
  • 2 tbsp oil
  • 4 jars Yeo’s satay sauce
  • 4 tins white beans

Fry sliced peppers in the oil until slightly softened, then add the baby corn and fry a few more mins. Add the satay sauce and let it get hot then add the beans and heat through. Done!

This is the sauce I use! It’s the best satay sauce, I think most satay sauces you find in supermarkets are way to sweet but this ones got the perfect balance!

Freezer clear-out before the move!

Can not believe that that on Sunday we’ll be locking up this place for the last time! Unless we decide to move back in a few years of course๐Ÿ˜‰ I still feel like sh*t, definitely got the flu. Fever is finally gone but got a bad cough, aches and the energy level are nonexistent..

I am so excited to move to Bournemouth and be living by the sea side. I’m so happy that Winter will be growing up in a beautiful place with nature on the doorstep! I don’t mean to hate on London, we have had some great times here but it’s not the place I want to raise my child.

Anyhow, trying to use up the last bits in the freezer and had these 2 yummy meals this week. They’ve been sitting in the freezer for a while! Cant wait to be settled in to our new flat, do a massive food shop and start cooking again.

Porridge, Move and Fever!

I have had a fever for 2 days now! So very frustrating especially as we got so much to do before the move!! I have managed to go through all my clothes already which is great. Ended up with 5 massive bags going to charity and Jack’s gonna start bringing stuff down to Bournemouth tomorrow! The new tenants are moving in on the 15th! Cant believe that we won’t be living here anymore by the end of next week! It’s been our home for 4 years. But who knows we might be back๐Ÿ˜†

Made this big bowl of porridge this morning. Been a while since I’ve had porridge, it’s been mostly semolina or overnight oats lately!

Oats with almond milk and topped with cinnamon, apple puree and frozen berries!

My Usual Breakfast!

I love a good breakfast! I tend to go for a sweeter breaky rather than savoury, and I’m all about porridge and vegan yogurt at the mo!

I love Alpros new unsweetened soygurt. Super tasty! Chuck in some berries, banana, bran flakes or dried berries. What ever you fancy! Yum!

Oats is a classic! So cheap and versatile! When it’s cold I love having porridge, I usually put in 2 ton of cinnamon Haha and when I want to treat myself I go heavy on the golden syrup!๐Ÿ˜‰ Overnight oats are a current fave! Check out my overnight oats recipe here. Semolina porridge is another huge favourite, so easy to make and I actually prefer to keep it very simple, it doesn’t need a lot of toppings or added flavours. I could eat semolina porridge on it’s own without anything! Click here for my semolina recipe!

And when all else fail a bowl of cereal with almond milk will do! ๐Ÿ˜

Lentils and Carrots with Coconut Milk

Happy Wednesday!! This dish is so nice. Creamy coconutty lentils! So easy to make! And budget friendly๐Ÿ˜„

Recipe 3 or 4 portions

  • 2 large grated carrots
  • 1 chopped onion
  • Oil
  • Sambal oelek (to taste)
  • 2 tbsp tomato puree
  • 2 or 3 garlic cloves
  • 1 veggie stock cube
  • 1 tin coconut milk
  • 300ml water
  • Bunch coriander
  • Juice of 1 lime
  • Salt and peppar to taste
  • 225 grams lentils

Fry onions in oil for a few minutes then add chopped garlic and the grated carrots, fry a few more minutes. Add everything else and simmer until lentils are cooked. Super simple and so yummy! Love this dish. Can be eaten with rice, pasta or on it’s own!

Why not double the recipe and put some in the freezer!
