Ginger, Cinnamon, Lemon and Mint Tea! And My Girl is 10 Weeks Old!

Jack’s gone down to Bournemouth today And is staying until Friday to continue renovating our new flat, feeling a bit of separation anxiety! Definitely gonna miss him but I’m so excited for the works to be done do that we can finally move in and start our new chapter by the seaside!!πŸ˜„

Little Winter is 10 weeks old today!! My lil girl! Feels like she’s been with us forever! Love my lil munchkin so much❀

I would also like to share this amazing drink I had earlier today at a cafe! I have never had tea this way and I don’t know why cause this was amazing! Never a fan of herbal tea bags but having it fresh was so yum!! I need to buy stuff so I can start making this at home!😍

Harissa Chickpeas and Kidney Beans with Oatly Creme Fraiche

My first blog post! Yeey 😊

Managed to whip this up yesterday. Basically me trying to use up what we had at home! So totally improvised but I have to say it came out really delicious and I would definitely make this again 😊

Decided to start this blog so that I have a place to upload and keep my recipes. Feel like it’s easier to keep them all on here instead of just Instagram. Love cooking and baking but haven’t got much time at the moment as I’ve got my beautiful lil 9 week old baby girl Winter to look after! But hopefully as she gets older I’ll have more time to spend on cooking and baking again!

Recipe 4 portions

  • Oil
  • 2 onions
  • 1 large or 2 small carrots
  • 2 garlic cloves
  • 200ml tub of Oatlys vegan creme fraiche
  • 100ml plant milk(I used oat)
  • 1 veggie stock cube
  • 2 tins chickpeas
  • 1 tin kidney beans
  • Harissa paste (to taste, I used about a tablespoon)
  • Juice of 1 lemon
  • Bunch of parsley
  • Salt and peppar to taste

Chop onion, carrot and garlic. Fry these in the oil until it’s softened a bit. Add the Harissa paste and fry a couple more minutes. Add everything else and simmer for 30 minutes! It’s that easy!! Eat this with rice or any type of grain you like, would also work with pasta or just on it’s own 😊 Enjoy!
