Beans in Satay Sauce!

Finally have a kitchen again! So nice to be able to cook again!🙌

This is the easiest meal prep! Cheating with store bought satay sauce! Haha This took no more than 20 mins start to finish. Great when you have a needy baby!!😉😉

Recipe – 5 large portions

  • 2 sliced peppers
  • 175g baby corn
  • 2 tbsp oil
  • 4 jars Yeo’s satay sauce
  • 4 tins white beans

Fry sliced peppers in the oil until slightly softened, then add the baby corn and fry a few more mins. Add the satay sauce and let it get hot then add the beans and heat through. Done!

This is the sauce I use! It’s the best satay sauce, I think most satay sauces you find in supermarkets are way to sweet but this ones got the perfect balance!

Freezer clear-out before the move!

Can not believe that that on Sunday we’ll be locking up this place for the last time! Unless we decide to move back in a few years of course😉 I still feel like sh*t, definitely got the flu. Fever is finally gone but got a bad cough, aches and the energy level are nonexistent..

I am so excited to move to Bournemouth and be living by the sea side. I’m so happy that Winter will be growing up in a beautiful place with nature on the doorstep! I don’t mean to hate on London, we have had some great times here but it’s not the place I want to raise my child.

Anyhow, trying to use up the last bits in the freezer and had these 2 yummy meals this week. They’ve been sitting in the freezer for a while! Cant wait to be settled in to our new flat, do a massive food shop and start cooking again.

Eating Vegan at Nandos!!

Anyone for a cheeky Nandos?? 😉

Me and the husband absolutely love Nandos. He’s a meat eater and I’m a vegan (obvs) and we both love Nandos and must have gone hundreds of times! When I was pregnant with Winter we went pretty much every weekend!😜

So easy to make their veggie stuff vegan by asking for no mayo or cheese on the salads, burger etc.

I always go for the Supergreen Pita (no mayo) and a side of chargrilled veg!

Lentils and Carrots with Coconut Milk

Happy Wednesday!! This dish is so nice. Creamy coconutty lentils! So easy to make! And budget friendly😄

Recipe 3 or 4 portions

  • 2 large grated carrots
  • 1 chopped onion
  • Oil
  • Sambal oelek (to taste)
  • 2 tbsp tomato puree
  • 2 or 3 garlic cloves
  • 1 veggie stock cube
  • 1 tin coconut milk
  • 300ml water
  • Bunch coriander
  • Juice of 1 lime
  • Salt and peppar to taste
  • 225 grams lentils

Fry onions in oil for a few minutes then add chopped garlic and the grated carrots, fry a few more minutes. Add everything else and simmer until lentils are cooked. Super simple and so yummy! Love this dish. Can be eaten with rice, pasta or on it’s own!

Why not double the recipe and put some in the freezer!

Grain and Bean Salad with Guacamole!

Hope everyone is having a good Monday. 1st of April!!!! What happened to March! Time is going so fast it’s scary. Winter will be 12 weeks tomorrow!

Prepared 4 lunchboxes this morning. This took me less than 15 minutes to put together! Super healthy and yummy, got my protein, complex carbs and healthy fats!😍

How good does this look!?

Grain and bean salad

  • 1 microwave packet of mixed grains (I used Sainsburys own brand mixed wholegrain rice and freekeh) or cook grains from scratch if you got the time 😉
  • Tin of mixed beans
  • Small tin of sweet corn
  • 1 red pepper
  • Half a small cucumber
  • Bunch of coriander
  • Salt and pepper to taste

Microwave the rice. Chop cucumber and pepper in to small pieces. Chop the coriander then mix everything in a big bowl. Salt and pepper to taste.

Before the mixing!

Guacamole

  • 3 avocados
  • Half a red onion
  • Juice from half a lime
  • Chilli flakes
  • Bunch of Coriander
  • Salt and peppar to taste

Finely chop red onion and coriander then mix everything in a bowl. I kept my guac a bit chunky.

Divide everything in to 4 lunchboxes! Simple healthy and delicious😍

Excited to eat this!

Now I’m set for 4 days! This is also super cheap. Most expensive part of the meal is the avos at £1.40 a piece. But the grains are 85p a pack and the beans are 55p! So all together it’s very budget friendly😊

Easy Vegan White Bean and Carrot Curry!

Happy Friday! Currently waiting for Jack who’s been down in Bournemouth all week! He should be home any minute now, yeey!

If you’re not sure what to have for dinner tonight then why not make this super easy bean curry, So yummy and dead easy to make!

Recipe 3 or 4 portions

  • 1/2 Onion, Chopped
  • 2 Carrots, Chopped in to small pieces
  • 2 tbsp oil
  • 1-2 tbsp Curry powder
  • 2 tbsp flour
  • 300ml water
  • 200ml coconut milk
  • 1 veggie stock cubes
  • 2 tins white beans
  • Salt and peppar to taste

Fry onion and carrots in the oil until the onions start to go clear. Add the curry powder and flour, stir it all in and cook for a few more minutes. Add the stock cube, water and coconut milk. Simmer until its thickened slightly then add the beans. Salt and peppar to your liking. This is a real favourite in my household!😍

Eat with rice or on it’s own!

I always double the recipe so that I can freeze some! Love a freezer friendly meal 😉

Easy Vegan Lentil and Coconut Curry

Happy humpday! Half way through the working week already! The weeks are flying.. Jack’s working hard on the flat down in Bournemouth, I can’t wait to get down there in April!! So excited to spend the summer by the sea side.

Made this lentil curry a few weeks back, another super yummy and healthy freezer friendly meal! Jack has always said that he’s not a fan of lentils but he happily ate this dish! Thumbs up from both of us!

Recipe 4 portions

  • Oil
  • 2 Red onions
  • 3 garlic cloves
  • 250g red lentils
  • 2 tins coconut milk
  • 2 veggie stock cubes
  • 400g cherry tomatoes
  • Bunch of fresh coriander
  • Juice of one lemon
  • 2 tbsp curry powder
  • 1 tsp cinnamon
  • Bit of water (depends on how thick you want your curry)
  • Salt and peppar to taste

Chop red onion and garlic then fry in the oil for a few minutes until onions have softened a bit. Then add curry and cinnamon, fry for a few more minutes then add everything else, (apart from the coriander, add that right at the end) simmer until lentils are soft! So so simple anyone can do it! Super yummy with rice or just a salad😊
