Porridge, Move and Fever!

I have had a fever for 2 days now! So very frustrating especially as we got so much to do before the move!! I have managed to go through all my clothes already which is great. Ended up with 5 massive bags going to charity and Jack’s gonna start bringing stuff down to Bournemouth tomorrow! The new tenants are moving in on the 15th! Cant believe that we won’t be living here anymore by the end of next week! It’s been our home for 4 years. But who knows we might be backπŸ˜†

Made this big bowl of porridge this morning. Been a while since I’ve had porridge, it’s been mostly semolina or overnight oats lately!

Oats with almond milk and topped with cinnamon, apple puree and frozen berries!

My Usual Breakfast!

I love a good breakfast! I tend to go for a sweeter breaky rather than savoury, and I’m all about porridge and vegan yogurt at the mo!

I love Alpros new unsweetened soygurt. Super tasty! Chuck in some berries, banana, bran flakes or dried berries. What ever you fancy! Yum!

Oats is a classic! So cheap and versatile! When it’s cold I love having porridge, I usually put in 2 ton of cinnamon Haha and when I want to treat myself I go heavy on the golden syrup!πŸ˜‰ Overnight oats are a current fave! Check out my overnight oats recipe here. Semolina porridge is another huge favourite, so easy to make and I actually prefer to keep it very simple, it doesn’t need a lot of toppings or added flavours. I could eat semolina porridge on it’s own without anything! Click here for my semolina recipe!

And when all else fail a bowl of cereal with almond milk will do! 😍


Chia Seed Pudding – Great Basic Recipe

I wanted to share this great chia seed pudding recipe. Love having chia seed pudding for breakfast or as a dessert! Used to make chocolate chia seed pudding all the time, Yum!

Cinnamon and vanilla pudding with berries!

Chia seeds are a great source of protein and omega 3 fatty acids which is great for vegans! But everyone can benefit from adding chia seeds to their diet😊

Recipe 1 portion

  • 3 tbsp chia seeds
  • 1 cup/240ml plant milk

This is the base and to this you can add what you want. E.g. To make a PB and choc pudding simply add a tbsp each of peanut butter and chocolate powder. I would recommend adding some type of sweetener as well. Some agave, date or golden syrup for example!

For this pudding I added

  • Half teaspoon cinnamon
  • 1 teaspoon golden syrup
  • A couple drops vanilla extract
  • Topped with frozen berries

Simply mix everything apart from the berries and leave in the fridge over night! Add the berries when your ready to eat your pudding😊



Banana and Cinnamon Overnight Oats!

I love overnight oats!! Used to have it all the time. I’m the type of person who gets obsessed with a certain type of food and will only eat that one thing for months haha Then I’ll get obsessed with something else for a while, now I’m back on overnight oats. It’s so simple to make a batch and keep in the fridge ready to go😊

This version is completely sugar free, the sweetness comes from mashed banana.

Recipe 1 portion

  • Half cup/50 gram oats (don’t use quick oats)
  • 1 cup/240ml plant milk
  • Half tbsp chia seeds

This is the base for the overnight oats, feel free to add what ever you like to this! Peanut butter, chocolate, berries, golden syrup, you name it!πŸ˜‡

I added the below

  • Half of a banana, mashed
  • Cinnamon
  • Topped with raspberries and Apple puree when I was ready to eat it.

Mix oats, cinnamon, chia seeds, mashed banana and plant milk. Stick it in the fridge over night and top with what ever you fancy before serving! Super simple and cheap!

Semolina Porridge – My Childhood Favourite!

Another Monday and a new week! My husband is home today so we have had a nice family day together. Managed to watch a couple episodes of Tin Star even!! We have a very happy baby at the moment 😊

I started my day with something I have not had for a long time! My absolut childhood breakfast favourite – Semolina Porridge!! 😍

Semolina porridge is easy to make and you don’t really have to add any sugar cause semolina is quite sweet on it’s own. As a kid I used to just put loads of Apple puree on my porridge and that’s exactly what I did today😍

Recipe – 1 big portion!

  • 50g Semolina
  • 300ml plant milk
  • Topping of your choice

Put the milk and semolina in a pan and heat on low/medium heat. The trick here is to KEEP STIRRING! You don’t want a lumpy porridge believe me. It’s all about getting it real smooth 😊 cook until it’s thickened, the time can vary depending on the plant milk you use but I’d say between 7 and 10 minutes roughly.

Top with anything you like! I used Bionas Apple puree which is 100% Apple and nothing else, really yummy!

Yum yum yum! Need to make it more often!
