Vegan Sponge Cake!

Its Friday!! Yeey. Jacks coming back home from Bournemouth today and the sun is shining. I have been sorting out my clothes this week and got 6 huge bin bags full of stuff that’s going to charity! Feels so good to have a clear out😊

As its Friday why not make this easy marble sponge cake! Or as we call it in Sweden Sockerkaka which directly translate to sugarcake!

Sorry about the awkward measurements but I have converted this from a swedish recipe!

Recipe

  • 1 cup + 1/4 cup flour
  • 1/2 cup minus 1 tbsp almond flour
  • 100g melted vegan butter
  • 200ml plant milk
  • 1 tbsp baking powder
  • 1 cup + 1 tbsp sugar
  • 1 tbsp vanilla extract
  • Half of a mashed banana
  • Pinch of salt
  • 3 tbsp cocoa powder

Mix the dry ingredients in a bowl. However, do not mix in the cocoa powder. Mix the melted butter, plant milk and the mashed banana then add this to the dry ingredients. Pour half of the batter in to another bowl and add the cocoa powder to one of the bowls. Don’t over mix the batter, gently mixing with a spatula is enough. Grease and flour a baking tin, pour in the batter one bowl at a time then run a fork through it to get the marble effect. Bake at 175° for 35 – 45 minutes. The time depends on the ripeness and size of the banana. Check your cake for the first time with a knife at the 35 minute mark. It should come out clean.

I should have run the fork through it a few more time to get more of a marble effect!

Chocolate Oatmeal Cookies – 4 Ingredients!!

Happy Sunday! Hope you are all having a good day. My first mothers day😇

I saw a recipe for some oatmeal cookies on the blog budgetfriendlyvegan and wanted to give them a go! Change it a little bit as Jack doesn’t like raisins😜

Recipe 9 cookies

  • 135 gram oats (grind half in to oat flour in a food processor)
  • 2 mashed up bananas
  • 1 tbsp chia seeds
  • 2 tsp cocoa powder

Mix everything in a bowl. Roll in to 9 balls, put these on a baking tray and flatten. I made the about a centimeter thick. Bake at 180° for 20 minutes.

I would definitely make them again! Very squidgy and soft! Perfect as a healthy breakfast cookie to eat on the go!

Chewy Chocolate Syrup Cookies!

Such a gorgeous day!!! Went for a walk earlier the park with Winnie. Sun is shining and I feel like summer is just around the corner!!

Another Swedish classic! Syrup Cookies!! So yummy😍 Perfect Sunday treat!

Recipe

  • 100 gram vegan butter (room temperature)
  • 1/2 cup sugar
  • 2 tbsp golden syrup
  • 2 and 1/2 tbsp cocoa powder
  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp vanilla

I’ve topped my cookies with pearl sugar that I got from Sweden, never seen it here in the UK but you could use sprinkles or coconut instead. You could also just leave it out.

Mix everything with an electric whisk or by hand (just takes a bit longer), flatten the dough on to a baking tray, make sort of a square about half a centimeter thick. It will “melt” a bit in the oven. Bake for 10-13 mins at 175°. It’s should still be very soft when you take the tray out. Cut in to portions with a pizza cutter or knife while it’s still warm. Then leave to cool! Enjoy😊

Vegan Gooey Chocolate Mini Cakes

Happy Friday! If you fancy something really chocolatey, gooey and yummy tonight as a Friday treat than look no further than these gooey mini cakes!! This is a staple if you grew up in a Swedish household! So sweet and yummy. It’s similar to a brownie but much gooier!

This is a vegan take on the Swedish classic Kladdkaka! It’s basically a super gooey chocolate cake. The middle should feel almost uncooked! The gooier the better😍

Recipe – 10 mini cakes

  • 100g melted vegan butter
  • 1/3 cup + 1/2 cup flour
  • 1/3 cup + 1/2 cup + 3 tbsp sugar
  • 1/4 cup cocoa powder
  • 1 tbsp vanilla extract
  • Pinch of salt
  • 100ml vegan cream
  • 40grams chopped dark chocolate (optional but recommended)

Mix everything with a spoon then divide between 10 muffin cases, bake at 185° for approx 15-17 mins. Leave to cool, they will firm up a bit. These actually taste better the next day!
