Another Swedish classic! Syrup Cookies!! So yummy😍 Perfect Sunday treat!
- 100 gram vegan butter (room temperature)
- 1/2 cup sugar
- 2 tbsp golden syrup
- 2 and 1/2 tbsp cocoa powder
- 1 cup flour
- 1 tsp baking powder
- 1 tsp vanilla
I’ve topped my cookies with pearl sugar that I got from Sweden, never seen it here in the UK but you could use sprinkles or coconut instead. You could also just leave it out.
Mix everything with an electric whisk or by hand (just takes a bit longer), flatten the dough on to a baking tray, make sort of a square about half a centimeter thick. It will “melt” a bit in the oven. Bake for 10-13 mins at 175°. It’s should still be very soft when you take the tray out. Cut in to portions with a pizza cutter or knife while it’s still warm. Then leave to cool! Enjoy😊
