Happy Friday! If you fancy something really chocolatey, gooey and yummy tonight as a Friday treat than look no further than these gooey mini cakes!! This is a staple if you grew up in a Swedish household! So sweet and yummy. It’s similar to a brownie but much gooier!
This is a vegan take on the Swedish classic Kladdkaka! It’s basically a super gooey chocolate cake. The middle should feel almost uncooked! The gooier the better😍
Recipe – 10 mini cakes
- 100g melted vegan butter
- 1/3 cup + 1/2 cup flour
- 1/3 cup + 1/2 cup + 3 tbsp sugar
- 1/4 cup cocoa powder
- 1 tbsp vanilla extract
- Pinch of salt
- 100ml vegan cream
- 40grams chopped dark chocolate (optional but recommended)
Mix everything with a spoon then divide between 10 muffin cases, bake at 185° for approx 15-17 mins. Leave to cool, they will firm up a bit. These actually taste better the next day!
Definitely not the healthiest but we all deserve a treat from time to time! 😉
